He built the oven
with his own hands.

Rainer left Switzerland in 2020 and made Tbilisi his home. With no pizza-making experience but a lifetime of carpentry skills, he built everything by hand — Popolo's cozy interior, the counters, the tables, and most remarkably, its iconic wood-and-gas-fired brick oven.

Nestled in Fabrika's courtyard — a converted Soviet textile factory turned into Tbilisi's most vibrant cultural hub — Popolo quickly became a neighborhood favorite.

The Oven

Our brick oven was built entirely by hand — by Rainer himself, using his carpentry skills and locally sourced materials. It fires at 370°C, fueled by wood and gas. It holds heat so well that every morning, we bake our sourdough bread and brownies at 220°C from the previous night's fire.
