Popolo is a cozy neighbourhood pizzeria in the district of Chugureti, Tbilisi. We are located in the courtyard of Fabrika.

Slow fermentation, no shortcuts — that's where the flavor comes from.

Our founder is Swiss, formerly co-founder of Farina Tbilisi. He designed and built our Neapolitan wood-fired oven himself, brick by brick, right in the heart of Fabrika. After baking the first 1000 pizzas himself, the team grew. Meanwhile we are a team of around 11, operating 12 hours every day. Our oven fires up to 370°C, hot enough to turn that 48-hour dough into a soft and crunchy pizza.

We use fresh ingredients only. Eaten hot, straight out of the oven, pizza creates this amazing fusion of flavours. Simple but tasty! If it is delivered in a box, it's not the same as straight out of the oven, the cheese still pulling, the crust still crackling. That moment doesn't survive a delivery bag.

Alongside the pizza we offer fresh sourdough bread, home-made brownies, Georgian craft beer and natural wine. On weekends, our bar comes alive — glasses passed hand to hand, evenings that run long.

The Oven

Our brick oven was built entirely by hand, laid brick by brick by our founder. It fires up to 450°C if needed and holds its heat so well that in the morning we bake sourdough bread and brownies at 220°C, which is exactly the temperature from the previous night's fire.

Delivery

Can't make it to the courtyard?

Order Popolo to your door through Wolt or Glovo. We'll be honest though, a pizza eaten hot, straight out of the oven, is a different experience from anything that travels in a box. If you can, come sit with us.

Popolo at Your Event

We built a third oven — this one on wheels.

After building two ovens, our founder decided a third was needed: one on wheels. And the best part, we can bring it to you.

This oven is built specifically for big events, and bakes up to 100 pizzas an hour. We have catered Tbilisi Openair, the Swiss national day celebration at the embassy, and a range of corporate events.

Whether you are planning a wedding, a company party or a festival — if there's a crowd and a bit of space for the oven, we can make it work.

We take on people for the kitchen and the service, and for the events we cater on the mobile oven through the summer.

Experience is welcome but not a must. Most of what we do here is learned on the floor, next to someone who already knows it. What matters is turning up and caring about the work.
